(Oct. 27, 2023) – There is a buzz in the air – literally – at St. Petersburg Distillery regarding the Oct. 27 launch of its newest product, a 90-proof barrel aged Honey Spirit, and the unveiling of their very own onsite bee colony by the end of October. A pioneer in the craft spirits industry, St. Petersburg Distillery added the bee colony as a sustainable initiative for sourcing honey for future spirits.
“As far back as we have records, there has always been honey,” said Warren Gardner, Master Distiller at St. Petersburg Distillery. “From ancient civilizations offering honey as gifts to the gods to the modern-day incorporation into our diets for health and beauty, honey is a true superfood and a lovely sweetener. We’ve masterfully blended traditional techniques with unique, locally sourced ingredients to create this new honey spirit that is truly in a league of its own.”
The limited-edition Honey Spirit is distilled from honey and hops and aged in oak barrels. It presents a symphony of flavors, with the sweetness of honey harmonizing with the bitterness of hops, all enhanced by the rich, smoky notes imparted by four years of barrel aging. Only available while supplies last, the spirit is sold in 750 ml bottles and is available for purchase and sampling at the distillery’s tasting room and market store located at 800 31st Street South in St. Petersburg. Guests can also sample the “Honey, I’m Home” cocktail made with the new product in the distillery’s new Spirit Garden.
During the process of creating the honey spirit, the distillery was inspired to establish its own onsite bee colony that can be utilized for future spirits and products, including the new honey spirit should the product expand. Located on the 28-acre property, the bee hives will provide the distillery with high-quality, homegrown honey while also contributing to local biodiversity. Gardner will be tending to the hives once certified, but for now the distillery is partnering with the Pinellas Beekeepers Association of Florida. The addition of the beehives is a significant move in St. Petersburg Distillery’s journey towards sustainability and local sourcing.
