Chef Paul Mattison, executive chef and proprietor of Mattison’s Restaurants & Catering in Sarasota, Florida, announces the Fall Wine-Pairing Dinner Series at Mattison’s Forty-One, 7275 South Tamiami Trail, Sarasota, Florida 34231. All three dinners are meticulously prepared five or six-course dinners paired with hand selected wines from each of the vineyards and starts at 6:30pm. Each dinner is $75 plus tax and gratuity. The first dinner is on Wednesday, September 18, 2013 featuring Illuminati Vineyards. Stefano Illuminati, third generation vineyard owner, is the special guest and wine expert to guide guests throughout the evening. The tradition of Illuminati Wines has continued for over 120 years. 1st Course Scungilli chickpea pesto, lemon zabaglione, grilled crostini served with a 2011 Costalupo Bianco, a dry and free refined blend of Trebbiano d’Abruzzo, Passerina, and Chardonnay
2nd Course Key West Pink Shrimp wax bean panzanella, house made ricotta, salmoriglio sauce served with a 2011 Pecorino a delicate blend of Trebbiano d’Abruzzo, Passerina, and Chardonnay
3rd Course Black Pepper Pappardelle porcini mushroom, beef short rib, sundried tomato ragu served with a 2010 Riparosso, a well rounded Montepulciano
4th Course Lamb Raviolo arugula, Gorgonzola, blackberry agrodolce, truffled lamb reduction sauce served with a 2007 Montepulciano d’Abruzzo Reserva Zanna, rated 90 points by Wine Enthusiast
5th Course Porchetta braised greens, roasted butternut squash, taleggio cheese sauce served with a 2007 Pieluni Reserva, rated 90 points by Wine Enthusiast
6th Course Dark Chocolate Flourless Torte sea salt, crispy chocolate dipped pancetta served with a 2007 Lumen, high end blend of Montepulciano and Cabernet Sauvignon, rated 92 points by Wine Enthusiast
The second wine-pairing dinner is on Thursday, October 24, 2013 featuring Chateau Ste Michelle, a 105 acre property in Woodinville, Washington offering award-winning wines from the state’s oldest winery. Our wine guide for the evening is the esteemed District Manager of Chateau Ste Michelle, Joe Guzman.
The third wine-pairing dinner is on Monday, November 11, 2013 featuring Collier Falls Vineyard located in Dry Creek Valley in Sonoma County California.
