Chef Paul Mattison, executive chef and proprietor of Mattison’s, announces a nine-course Titanic Wine-Pairing Dinner at Mattison’s Forty-One, 7275 South Tamiami Trail, Sarasota, FL 34231 telephone 941.921.3400 on Sunday, November 11, 2012 from 6pm. The dinner is organized by the esteemed Chaîne des Rôtisseirs and non-members are more than welcome to attend the dinner. The price is $125 per person plus tax and gratuity. 2nd Course: Cream of Barley Shooter with whiskey whipping cream
3rd Course: Kumamoto Oyster with Champagne mignonette
4th Course: Poached Wild Salmon cucumber, dill, mousseline sauce served with a Cakebread Chardonnay
5th Course: Asparagus and Watercress Salad, roast squab, Champagne saffron vinaigrette served with a Cakebread Pinot Noir
6th Course: Punch Romaine Cocktail
7th Course: Lamb Noisette, fine herb crusted, lyonnaise potatoes with truffles, baby vegetables with chestnuts, beurre rouge served with a Cakebread Zinfandel
8th Course: Beef Filet, creamed carrots, zucchini farci, black truffle madeira reduction sauce served with a Cakebread Cabernet Sauvingon
9th Course: Waldorf Bread Pudding, apple, cranberry, walnut bread pudding with cranberry sorbet served with a Tawney Port
